In Puerto Rico, piononos are appetizers usually served during parties who bring an element of sweet and salty.
4 plantains, ripe (yellow)
½ lb ground beef
½ lb ground pork
1 onion, diced
1 shallots finely chopped
1 egg beaten
Season the meat with spices: salt, pepper, thyme, nutmeg. Add onion, shallot and egg. Mix well. Brown in a little oil and fry over medium heat. Reserve this stuffing.
Cut plantains into slices. Fry in oil until they are golden on each side. Remove from skillet and arrange on a plate.
Place a tablespoon of filling on each slice of plantain and roll. Prick with a toothpick to hold.
